When preparing a fish carcass for cooking, you need to remove the eyes, gills and spine. You need to make broth from the fillet.
Take:

Leeks (stems) - 2 pcs.
Onions - 2 pcs.
Celery root - 1 pc.
Celery stalks - 3 pcs.
We clean and wash the vegetables . We break the carrots and celery stalks in half, cut the root into 8 parts, cut the zucchini and leek into 4 parts. Cook the fish (gutted, cleaned, separated from the backbone). Remove all bones and cut each fish piece into halves.
Pour 4 liters of water into a saucepan, throw in all the vegetables and fish spine . Leave half of one carrot and a little leek and herbs in stock.
