  • small perches – 8-10 pcs.;
  • flour - 1 tbsp.;
  • pepper – 1 coffee liter;
  • dried dill – 1 dec. l.;
  • salt - to taste;
  • onions – 2 pcs.;
  • fresh cucumbers – 3-4 pcs.;
  • fresh tomatoes – 2-3 pcs.;
  • fresh dill – 2 bunches;
  • bay leaves – 2 pcs.;
  • white mustard seeds – 1 tsp;
  • peppercorns – 5 pcs.

Remove the carcasses from the head, fins, entrails and skin with scales, and rinse. For breading, mix flour, pepper, dry dill and salt. Then fry the fish, first roll it in breading and place it in a separate deep bowl, for example, a cauldron. Then place on it in layers: half-circles of onion, mugs of cucumber, mugs of tomatoes, chopped fresh dill. In addition to the listed components, add the indicated spices and lightly salt. Simmer the dish over low heat for 40-50 minutes.

Useful tips and tricks

To properly cook perch, you need to pay attention to the following tips:

  • As a rule, sea bass is sold frozen. In order not to spoil the taste of the fish, it must be defrosted properly. It is best to defrost perch in the refrigerator, leaving it on the bottom shelf overnight. Under no circumstances should you pour hot water over the fish or defrost it in the microwave.

  • When cutting up a perch, you need to pay special attention to the black film that is located on the inside of the abdomen. It can impart bitterness to meat. The film should be carefully removed with a knife, and then the abdomen should be washed in running water.
  • You need to fry the perch for 10 minutes. Fry for 5 minutes in a frying pan with the lid open. Then you need to turn the perch over to the opposite side and fry for another 5 minutes. In this case, the lid of the pan should be closed. Perch prepared in this way turns out well-done, juicy and tender.
  • Fried perch goes very well with dry white wine.
  • To make the fried perch aromatic, it needs to be marinated in soy sauce or lemon juice with spices.

Sea bass is considered a valuable commercial fish species. Most often it is cooked in the oven or fried in a frying pan. Regardless of the cooking method, perch turns out tasty, healthy and nutritious.
