Compound:
- carp fillet – 0.75 kg;
- chicken egg – 1 pc.;
- onions – 0.2 kg;
- green onions – 10 g;
- fresh parsley or cilantro – 10 g;
- fresh dill – 10 g;
- dried thyme – 3 g;
- ground black pepper – 3 g;
- salt - to taste;
- tomato paste – 20 ml;
- water – 0.2 l;
- refined vegetable oil – 20 ml;
- wheat flour (or buckwheat, oatmeal) - how much will be used for breading.
Cooking method:
- Cut the carp fillet into pieces and turn it through a meat grinder twice. Add salt and pepper and stir.
- Wash the greens, pat dry with a napkin, chop as finely as possible, add to the minced meat, stir it.
- Peel the onions, finely chop them and divide approximately in half.
- Add half the onion to the minced meat. Break an egg into it. Knead the minced meat with your hands and put it in the refrigerator for 20-30 minutes.
- Fry the onion in vegetable oil until golden brown.
- Dilute the tomato paste with water, adding a little salt and thyme.
- Pour the tomato sauce into the frying pan with the onions and simmer for 5-10 minutes.
- Remove the minced meat from the refrigerator, form it into cutlets, bread them in flour and place them in a baking dish.
- Pour tomato sauce over the cutlets.

- fillet - 500 gr.;
- milk – 150 ml;
- onion – 2 heads;
- white loaf;
- crackers – 100 gr.;

How to cook:
- The onion is peeled, finely chopped and sautéed until golden.
- Carp meat is ground in any available way.
- The loaf is soaked in milk and kneaded.
- Squeeze out the moisture and add to the minced meat.
- The greens are washed, finely chopped, and placed in a common bowl.
- Add cooled onions, salt and lemon pepper.
- The minced meat is kneaded until it becomes homogeneous.
- Pour oil into a frying pan with thick walls and heat it up.
- In the meantime, cutlets are formed into any shape, rolled in breadcrumbs and placed to fry.
- Cook on each side for 10 minutes over moderate heat.

Ingredients for cooking:
- minced carp fish – 500 g;
- chicken eggs – 3 pcs.;
- salad onion – 2 pcs.;
- stale white bread – 4 pieces;
- whole cow's milk – 125 ml;
- salt;
- a mixture of aromatic ground peppers;
- corn flour.

Other recipes for minced fish dishes
Let's consider a recipe for carp cutlets with a different set of ingredients. In addition to, in fact, fish fillet, onions, spices, flour, we use vegetable oil instead of melted butter, and chopped dill instead of green onions. You will also need 2 eggs, 3 pieces of white loaf.
Pre-soak the loaf in milk or water. Pass the fish fillet and onion through a meat grinder (you can use a blender). There we send eggs, herbs, bread, spices to taste, mix everything thoroughly. Leave it for a while.

- In a bowl, combine minced meat, onion, flour, salt, and butter. Mix thoroughly. If there is no flour and there is nowhere to grind the cereal, then add regular boiled buckwheat.
- Line a baking sheet with foil and form round cutlets.
- We put them in one row. Place in the oven, heated to 190 degrees, for 35 minutes.

If you have a whole carp carcass in front of you, clean it of scales and gut it.
Then you need to cut off the head, tail, ridge and fins with scissors or a sharp knife. The carcass is washed well in water. After separating the fillet, select small bones and cut the carp into pieces that will be convenient to grind.
