How to cook tench in foil in the oven

Another big plus is that preparing tench is very easy and simple, there is practically no preparatory work with the fish - there is no need to clean the tench in the usual way.

Tender tench in the oven in sour cream with mushrooms

Another version of the traditional Russian combination, ideal for lunch; as a dinner, the dish may seem a little heavy. It is recommended to serve fish with mushrooms with slices of lemon or lime, with a bunch of fresh herbs and lettuce leaves. Ideally, use porcini and boletus mushrooms, but the taste of champignons will be no worse. And if you want to increase the satiety of the dish, add potatoes or boiled rice to the recipe. But in this case, you will have to cook exclusively in pots - the cereal will dry out in the form.

Ingredients:

  • tench – 2 pcs.;
  • mushrooms – 250 g;
  • onions – 2 pcs.;
  • white wine – 300 ml;
  • sour cream 10% – 200 g;
  • flour - 1 table. spoon;
  • lemon;
  • butter – 30 g;
  • salt.

Cooking method:

  1. Prepare the fish for work according to the standard procedure: remove the head and tail, carefully scrape off the scales, remove the entrails and rinse with cold water.
  2. Cut into small pieces, ideally smaller than classic steaks. Remove large bones.
  3. Preheat the oven to 200 degrees.
  4. Cut the mushrooms into pieces, pour into a frying pan and brown in butter.
  5. Add tench and cook for a couple more minutes.
  6. Pour in white wine and simmer until it evaporates.
  7. Add sour cream, add flour, salt, mix.
  8. Place all ingredients in a baking dish.
  9. Add the sliced ​​onion and sprinkle with the juice of a quarter of a lemon.
  10. Cover with foil and cook for 35 minutes. Serve with remaining lemon slices.

How to cook in the oven

And in this form, placing the foil with the fish in a fireproof form, send it to the oven, preheated to 180-200 degrees.

After 25 minutes, take it out and unwrap the foil.

Lubricate the top of the line with a small amount of vegetable oil.

The only thing that is important is not to overdo it with fatty sauces: the tench will not dry out, even if you simply sprinkle it with the juice of any citrus and sprinkle it with spices. This is exactly what the basic recipe for its preparation looks like: a simple dietary dish that takes a minimum of time.

Ingredients:

  • tench – 2 pcs.;
  • onions – 2 pcs.;
  • lemons – 2 pcs.;
  • cardamom – 1/3 tsp. spoons;
  • ground white pepper – 1 teaspoon. spoon;
  • salt.

Cooking method:

  1. The first and most important thing is to clean the tench well if it is baked whole, as in this recipe. Pour boiling water over it, wait until the mucus coagulates, and scrape the skin with a knife.

  1. Heat the frying pan with vegetable oil. Over high heat, fry the tench on one side and the other for 5 minutes. Then reduce the heat and cook the fish until golden brown.
  2. Pieces of fish can be rubbed with salt and pepper, rolled in flour and fried on both sides until crispy. Then add onion rings to the fish preparations, fry in a frying pan for another 5 minutes, and then pour a little water and simmer the dish until fully cooked.
  3. Salt and pepper the prepared carcass and leave for 15 minutes. Melt butter in a frying pan. We dilute the flour with water, add a spoonful of sour cream, pepper and salt. Pour the mixture into a frying pan, mix with melted butter and as soon as the sauce boils, add the fish and simmer for 20 - 30 minutes.

Hearty tench with potatoes in butter sauce

Tench baked in the oven with potatoes is an excellent option for lunch or a holiday dinner. Prepare a delicious dish for your loved ones! Just a few ingredients, a couple of hours and a wonderful dish is ready!

We have to:

  • fish – 3-4 pcs.;
  • potatoes – 4-5 pcs.;
  • onions – 3 pcs.;
  • garlic – 3-4 cloves;
  • salt, spices - to taste;
  • fresh herbs - to taste;
  • sunflower oil.

First you need to wash and clean the fish. It is important to rid the carcass of organs and anything unnecessary. Be sure to wash the fish again. Mix sunflower oil, peeled and grated garlic, spices and, if desired, herbs. Pour this mixture over the fish and let it brew.

At this time, wash and peel the potatoes, cut them into thin slices. Place a layer of potatoes in a baking dish and add salt; you can add spices if desired. Afterwards we peel the onion, cut it into rings and place it on the potatoes. Then place the tench on top and pour in the remaining sauce. Then put the pan with the preparation in the oven and bake for 40 minutes at a temperature of about 200 degrees.

If you have sauce left, you can periodically pour it over the dish.

Cooking tench in foil in sour cream and ketchup

To do this you need to take:

  • tench – 3 – 4 pieces;
  • sour cream – 1 glass;
  • ketchup – ½ cup;
  • lemon – 1 piece;
  • salt, spices, herbs - to taste.

We prepare tench as follows:

We clean the fish, gut it, rinse it under running water, coat the entire carcass with salt and spices. Leave to marinate for half an hour - an hour. Cut the lemon into slices and put a few pieces into each fish. Place the tench on foil, coat with sour cream, ketchup and wrap. Bake at 200 degrees for about half an hour. 5 - 10 minutes before it is ready, unfold the foil so that the fish is slightly browned.

How to clean tench scales and mucus?

Tench usually weighs about 3 kilograms, making it easy to cook for the whole family. But before you prepare a tasty and nutritious dish, you need to figure out how to clean tench from scales. The first step is to remove thick mucus from the fish, which quickly darkens if the tench is taken out of the water. Previously, for these purposes, tenches were kept in cold water for a long time. But one trick will help us not waste time and quickly prepare dishes from tench: put the fish in the sink and pour boiling water over it thoroughly: the mucus will curl into rags due to the temperature, and it can be easily removed with a regular sponge or hands. Then the lines must be thoroughly rinsed in cold water. To remove the entrails and keep the slippery tench in your hands, rub it with coarse salt, then use a sharp knife to make an incision in the abdomen and remove the giblets.

The next stage is removing the scales. The tench’s scales are small and fit tightly to the skin, and therefore, before you clean the tench’s scales, think about whether it will really interfere with the finished dish? For example, when fried, it forms a tasty crust together with the skin. But for our tench in sour cream, it’s still worth removing the scales! This can be done very easily: pour boiling water over the fish again, and then immediately place it in a bowl of ice water. After this, the scales can be quickly removed with a regular spoon or a blunt knife, moving from the tail to the head.

With sour cream sauce

You can prepare the lake dweller in different ways. Tench can be fried, steamed or made into soup... But the tastiest is tench baked in sour cream. The fish comes out very tasty, tender and juicy.

Ingredients:

  • vegetable oil;
  • a glass of sour cream;
  • two spoons of flour;
