Preparation:


Wash the beans and cut into pieces about 2 cm in size.

Peel the carrots and cut into small pieces, similar in size to pieces of beans.

Boil water in a saucepan and salt it. Place carrots in boiling water. Boil it for 10 minutes. Add beans. Continue cooking for another 10-15 minutes until the beans and carrots are soft enough. Try not to overcook the vegetables: they should retain their shape.

Drain the vegetables in a colander and let them dry.

Wash the tomatoes, dry with a napkin, cut in half. Cherry tomatoes can be replaced with regular tomatoes by cutting them into small slices.

Place the boiled vegetables in a bowl, add tomato pieces. Pass the garlic through a press. Using a grater, remove the zest from half the lemon and add it to the garlic. Squeeze the juice out of half the citrus and mix it with vegetable oil.
